Ingredients 120g packet of rocket 250g of canned baby beetroot wedges 200g of canned brown lentils 60g of danish feta 1 handful of walnuts, chopped Dressing 2 tbsp extra virgin olive oil 1 tbsp balsamic vinegar 1 tsp of honey
Method: 1. Drain the lentils and beetroot and place in large bowl. 2. Add rocket, walnuts and sprinkle the feta over the top. 2. Combine olive oil, balsamic vinegar and honey in a small jar and shake. Drizzle over the salad; gently toss and serve!
