Ingredients: 2 x 120g pork loin steaks Pinch chilli flakes 1 apple, grated 2 cups of shredded red cabbage 1 large carrot, grated 2 tbsp chopped mint 1/4 cup natural plain yoghurt 1 tsp honey
Method: 1. Brush the pork lightly with olive oil. Rub it with the chilli flakes, salt & pepper. 2. Preheat a griddle plan or BBQ to high and cook the pork loins for 3 minutes each side, or until cooked to your liking. Leave to rest for at least 4 minutes, covered loosely with foil. 3. Combine the yoghurt and honey in a large bowl. Add the cabbage, carrot, apple and mint. Toss to combine and serve with pork steaks.
